Constant surveillance of the wines, which are cellared in various winery facilities in close proximity to the vineyard sites, is key. By purchasing fruit from select growers, and working in concert with vineyard management, Dan is able to nurture the grapes and the wine in a fashion that suits the richness and elegance he seeks for the wines. Using traditional small batch fermentation methods, Dan is able to extract optimum color, texture, aromatics and flavor components into each wine. For PINOT NOIR, we've sought old-vine fruit grown in Monterey's cool bayside climate. Daily morning fog, iron rich, decomposed granite soils and expressive fruit clones combine to make this a perfect source for this finicky grape. Focusing upon elegance rather than power, the Pinots from this region, located between the Santa Lucia and Gavilan Mountain ranges, have an exciting future ahead of them.

Napa Valley is the home of our CABERNET SAUVIGNON fruit, a match truly made in heaven. Vineyard sources for this offering include both valley and mountain plantings, as we seek to craft a wine that exhibits both complexity and accessibility. Warm days and cool nights bring luxurious ripeness and robust flavors, while inclusion of both Cabernet Franc and Petit Verdot into our varietal mix adds textural dimension and perfumed aromatics.

SYRAH is perfectly suited to the slightly warmer inland region of Paso Robles, on California's Central Coast. Balanced vine growth, meticulous vineyard management and outstanding ripeness of fruit characterize the grapes we select from this appellation. Lush, dark-berry intensity oozes from the fruit grown on the hills and benchlands of Paso, making this a full-blown, highly expressive style of wine.

Crafting a California SAUVIGNON BLANC with character and style can be challenging.  Our seach for the ideal vineyard site for this aromatic grape has drawn us to the Arroyo Seco Canyon in the cool coastal Monterey Bay area.  Stony soils on the floor of this breezy canyon overlay decomposed granite subsoils, creating an ideal environment for vine roots by helping to restrict the vigor of this untamed varietal.  The result is small-berried clusters on moderately sized vines, where indirect light into the cluster-zone allows perfect flavor development, giving us a zesty, perfumed wine with crisp acids and a forever-long finish.

With one of the longest and coolest growing seasons in California, the Santa Maria Valley in Santa Barbara County  provides the conditions we need to make spectacular CHARDONNAY.  Daily morning fog, steady afternoon winds and extremely long vintage hangtime are the hallmarks of this appellation, yielding Chards with exotic tropical fruit character, lush flavor dynamics and balanced acidities, all essential elements in crafting stylish whites with a type-A personality: rich and definitively fruit forward.
